Raisin Pie





You may think raisin pies are gross. If so, this would be because you've only ever had the kind at the supermarket, which they make with some kind of gritty gelatin stuff that is then made even worse by refridgeration. Don't let that prejudice you... this is what raisin pies are supposed to taste like.

INGREDIENTS

3 cups raisins
1/2 cup water
1/2 cup sugar
1/2 tsp salt
2 tbsp corn starch
1/2 cup orange juice
1 tbsp lemon juice
1 tbsp grated orange peel (optional)
1 tbsp butter
1 unbaked pie shell

Wash and drain raisins. In a saucepan, bring water to a boil, then add sugar and salt. When those have dissolved, add the raisins. Heat until the mixture boils again. Mix paste of corn starch and citrus juices and stir into raisin mixture. Cook and stir over low heat until thick and smooth. Add orange rind if desired, and butter. Stir well.

Pour into pie shell. Microwave on high for seven minutes, then bake in 450F oven for 10-15 minutes, or until pastry is golden-brown.
