Pineapple Upside-Down Cake





Y'know what I always connect with pineapple upside-down cake? That little poem from The Reluctant Dragon cartoon.

INGREDIENTS

1/4 cup butter
3/4 cup brown sugar
9 maraschino cherries
1 can pineapple
1/2 cup butter
1/2 cup white sugar
1 egg
1 1/2 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
3/4 cup milk

Melt the quarter cup of butter. Mix in the brown sugar and press into the bottom of a 9-inch square cake pan. Arrange the cherries so that there will be one in the centre of each of nine slices, and cover the rest of the bottom with pineapple.

Melt the half cup of butter, and mix in the sugar. Add the egg and mix well. In another bowl, combine the dry ingredients. Add to the butter/sugar/egg mixture alternately with the milk, ending with the dry ingredients. Mix thoroughly. Pour over pineapple layer and spread it out.

Bake at 375F for about 35 minutes. Let the cake cool for about five minutes and then turn it out onto a serving plate. Serve warm.
