Death To Dr. Atkins Pie





If you can find me a pie recipe more chock-full of carbs than this, I will eat it. Everybody wins!

INGREDIENTS

SHELL:
1 unbaked 9-inch pie shell
3 tsp lemon juice
1/2 tsp cinnamon
 
FILLING:
2 cups water
1 cup sugar
2 tsp cream of tartar
30 Ritz crackers (whole)
 
TOPPING:
30 Ritz crackers (crushed)
1/2 cup brown sugar (lightly packed)
1/2 tsp cinnamon
1/3 cup melted butter

Combine water, sugar, and cream of tartar, and bring to a boil. Drop in whole Ritz crackers and keep boiling for five minutes. Pour mixture into pie shell. Sprinkle with lemon juice and cinnamon.

Combine ingredients for crumb topping. Sprinkle over pie.

Bake at 400F for 15 minutes, then reduce heat to 350F and continue baking 15-20 minutes longer. Serve warm.
