Butter-Raisin Pie





It's like a butter tart. Only the size of a pie. What's not to love?

INGREDIENTS

3 eggs
3/4 cup packed brown sugar
3/4 cup corn syrup
3 tbsp melted butter
4 tsp flour
1 1/2 tsp vanilla
1/4 tsp salt
2 1/4 cups raisins
1 unbaked pie shell

In a bowl, beat eggs lightly. Stir in brown sugar, corn syrup, butter, flour, vanilla, and salt until blended. Stir in raisins. Pour in pie shell. Bake in 400°F over for 5 minutes. Reduce heat to 300°F. Bake for 1 hour longer, or until filling is foamy and solid. Let cool complete before cutting. Makes 10 servings.
