Breakfast Pie





I've never actually eaten this for breakfast. We always have it for dinner.

INGREDIENTS

3 tbsp butter
2 cups frozen hash browns
1/2 tsp celery salt
3/4 cup sliced mushrooms
1/2 cup chopped onion
1/2 cup chopped green pepper
5 eggs
1/2 cup milk
1 cup grated cheddar cheese
6 slices chopped bacon

Melt butter in a frying pan. Saute potatoes until brown. Sprinkle with celery salt and arrange in the bottom of a 9-inch pie plate. Arrange the musrooms, onions, and green peppers on top. Whisk the eggs with the milk and pour that in. Bake at 350F for 30 minutes or until set. While it's cooking, fry the bacon. When the pie comes out, turn the oven off but keep the door shut to hold the heat. Sprinkle first the bacon, then the cheese, over the top, then put it back in the oven for a couple of minutes to melt the cheese.
